I know, I know.  Vegetables for breakfast?  Weird.  But I have been feeling not 100% with all this travel and jet lag.  A 10.5 hour plane ride will do anyone in.  But the perfect cure really is eating well.  So I prepared this insane looking (even to me) breakfast the other day in about 3 minutes.  It was heavenly.  Whole Foods sells this awesome Broccoli and Carrot Slaw.  I a drizzled it with Glaser Farms Lemon Garlic Tahini Dressing which is you wanted to make yourself (which I have) includes exactly those ingredients + water and salt. And I tossed them on a bowl alongside an outrageously gorgeous roasted japanese yam (otherwise known as boniato in my Cuban house) which I had roasted the night before to have on hand…  Come’on, tell me that yam isn’t gorgeous??

I woke up feeling so-so but after this breakfast, I felt great to take on the rest of my day.  And, you can throw an egg on it if you must.  😉
