RECIPE | TOMATILLO SHAKSHUKA EGGS (10 minutes)

I woke up this morning with a craving for middle eastern shakshuka eggs. A dish where you poach eggs in stewed tomatoes, onions and peppers. But I saw some tomatillos I got yesterday sitting on the counter and thought maybe a green shakshuka might be nice. So… this was EASY and fast and delicious!

INGREDIENTS:
3 Tomatillos
2 green onions
2 leaves of kale
1/4 cup cilantro
1 small clove of garlic
1/2 cup water
3 eggs

PROCEDURE:
1. Wash produce
2. Rough chop into chunks
3. Pulse tomatillo, onions, cilantro, kale, garlic and water in food processor for one minute or until blended.
4. Pour mixture (should be runny) into pan and simmer.
5. Drop eggs into mixture and cover. Simmer 4-5 minutes or until eggs reach doneness you like.
6. Serve and enjoy!
