Tomatoes glorious tomatoes. They aren’t for everyone, some people with sensitive stomachs don’t fare so well with them. But you can adapt this idea with almost any veggie: asparagus, canned beans, squash. I am going for a run in a bit so grabbed these local farmer’s market tomatoes, washed them and throw them on a pan with garlic cloves, olive oil and salt. Total time invested: 3 minutes. I popped them in the oven at 325 while I went out.
An hour and a half later, I had gooey, melty, delicious roasted tomatoes great for spreading of english muffins, under and egg, together with some greek yogurt… lots of ways to serve these, but the general idea is to have them on hand when hunger strikes.
